Fish pie

I shot this fish pie for the WI but had the forethought to ask Dagmar who did the food styling to make it with gluten free flour so I could take it home and share it with Andro for supper, Just so comforting and delicious.

The wind is howling around our cottage in the woods. It has been dark and damp all day. We’re lighting the log burning stove and looking for every little bit of comfort we can find, and my thoughts turned to cake. Not any old cake, but rich gooey chocolate cake from the America’s warm deep south.
Mississippi Mud Cake● 125 gms margarine or butter ● 200 gms caster sugar ● 2 eggs ● 125 gms self-raising flour ● 2 tblsp cocoa powder ● 3/4 cups milk ● 1/2 cup boiling waterTopping: ● 50 gms sugar ● 50 ml water ● 100 gms plain chocolate, grated  ● 70 gms margarine/butter ● 1 tsps vanilla sugarBeat margarine or butter with the sugar, add the eggs, one at a time, add the flour, cocoa, milk and boiling water. Pour into a greased loaf tin and bake for 20-25 minutes at 200℃Allow to cool in the tin before making the topping.Topping:Heat the sugar and water, add the chocolate gradually and add the margarine or butter. Cool slightly before pouring over all over the cake.
